For the Crust:
- 2 boneless, skinless chicken breasts
- 1 large avocado, sliced
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh parsley, chopped
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Season chicken breasts with salt and pepper, then grill over medium heat for 6-7 minutes per side until cooked through. Let rest before slicing.
- In a small bowl, whisk together olive oil, lime juice, honey, minced garlic, cilantro, parsley, salt, and pepper to make the dressing.
- In a large bowl, combine mixed greens, cherry tomatoes, red onion, and avocado slices.
- Add sliced grilled chicken to the salad and drizzle with the herb dressing. Toss gently to combine and serve immediately.
