For the Crust:

  • 2 boneless, skinless chicken breasts
  • 1 large avocado, sliced
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Season chicken breasts with salt and pepper, then grill over medium heat for 6-7 minutes per side until cooked through. Let rest before slicing.
  2. In a small bowl, whisk together olive oil, lime juice, honey, minced garlic, cilantro, parsley, salt, and pepper to make the dressing.
  3. In a large bowl, combine mixed greens, cherry tomatoes, red onion, and avocado slices.
  4. Add sliced grilled chicken to the salad and drizzle with the herb dressing. Toss gently to combine and serve immediately.
