For the Crust:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 cups mixed salad greens
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons balsamic vinaigrette dressing

Instructions

1. Prepare the Crust:

  1. Season the chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.
  2. Grill the chicken over medium-high heat for 6-8 minutes per side, until fully cooked. Let rest for 5 minutes, then slice.
  3. In a large bowl, combine the mixed greens, avocado, cherry tomatoes, cucumber, and red onion.
  4. Top the salad with the sliced grilled chicken and crumbled feta cheese.
  5. Drizzle with balsamic vinaigrette dressing and toss gently before serving.
