For the Crust:
- 2 boneless, skinless chicken breasts

- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 avocado, sliced
- 1/4 cup olive oil
- 1/4 cup plain Greek yogurt
- 2 tablespoons lemon juice
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh parsley, chopped
- 1 garlic clove, minced
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Season chicken breasts with salt and pepper, then grill over medium heat for 6-8 minutes per side until cooked through. Let rest for 5 minutes, then slice.
- In a bowl, whisk together olive oil, Greek yogurt, lemon juice, dill, parsley, minced garlic, salt, and pepper to make the dressing.
- In a large salad bowl, combine mixed greens, cherry tomatoes, red onion, and avocado.
