Description

A refreshing summer salad featuring sweet grilled peaches, creamy burrata cheese, and a tangy honey-balsamic vinaigrette, served over peppery arugula.


Ingredients

For the Crust:

  • 2 ripe peaches, halved and pitted
  • 4 oz burrata cheese
  • 4 cups fresh arugula
  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste
  • 1/4 cup toasted walnuts, chopped
  • Fresh basil leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat grill or grill pan to medium-high heat. Lightly brush peach halves with olive oil and grill for 2-3 minutes per side until charred and tender. Set aside to cool slightly.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until emulsified to make the vinaigrette.
  3. Arrange arugula on a serving platter. Tear burrata into pieces and scatter over the arugula. Slice grilled peaches and add to the salad.
  4. Drizzle the honey-balsamic vinaigrette over the salad. Top with toasted walnuts and fresh basil leaves. Serve immediately.

Notes

You can customize the seasonings to taste.
