For the Crust:
- 4 ripe peaches, halved and pitted
- 8 oz burrata cheese
- 1/4 cup honey
- 1 tsp red pepper flakes
- 2 tbsp olive oil
- 1 tbsp fresh lemon juice
- Fresh basil leaves for garnish
- Sea salt to taste
- Black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat grill to medium-high heat. Brush peach halves with olive oil and season lightly with salt and pepper.
- Grill peaches cut-side down for 3-4 minutes until charred and tender. Remove from grill and let cool slightly.
- In a small saucepan, warm honey over low heat. Stir in red pepper flakes and lemon juice, then remove from heat.
- Arrange grilled peaches on a platter. Tear burrata into pieces and place over peaches.
- Drizzle hot honey mixture over the peaches and burrata. Garnish with fresh basil leaves and serve immediately.
