For the Crust:
- 1 large seedless watermelon, cut into 1-inch thick steaks
- 8 oz goat cheese log, sliced into rounds
- 2 tbsp olive oil
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1/4 cup balsamic pearls (or reduced balsamic glaze)
- Fresh basil leaves for garnish
- 1 tbsp honey (optional)
Instructions
1. Prepare the Crust:
- Preheat grill to medium-high heat. Brush watermelon steaks lightly with olive oil and season both sides with salt and pepper.
- Grill watermelon for 3-4 minutes per side until grill marks appear and edges are slightly caramelized.
- While grilling, place goat cheese rounds on a baking sheet and warm in a preheated oven at 350°F for 5-7 minutes until soft but not melted.
- Arrange grilled watermelon steaks on plates, top each with a warm goat cheese round.
- Sprinkle balsamic pearls over the top, drizzle with honey if desired, and garnish with fresh basil leaves. Serve immediately.
