Description

A refreshing summer dish featuring grilled watermelon layered with creamy whipped ricotta and tangy pickled onion vinaigrette.


Ingredients

For the Crust:

  • 1 small seedless watermelon, cut into 1-inch thick rounds
  • 1 cup ricotta cheese
  • 1/4 cup heavy cream
  • 1 tbsp honey
  • 1/2 red onion, thinly sliced
  • 1/4 cup apple cider vinegar
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • Fresh mint leaves for garnish
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a small bowl, combine red onion, apple cider vinegar, sugar, and salt. Let pickle for at least 15 minutes while preparing other components.
  2. In a mixing bowl, whip ricotta, heavy cream, and honey until light and fluffy. Season with a pinch of salt.
  3. Heat grill to medium-high. Brush watermelon slices with olive oil and grill for 2-3 minutes per side until grill marks appear.
  4. To assemble: Place one grilled watermelon round on a plate, top with a dollop of whipped ricotta, then another watermelon round. Repeat for 2-3 layers.
  5. Drizzle with pickled onion vinaigrette (including some pickled onions) and garnish with fresh mint leaves.

Notes

You can customize the seasonings to taste.
