Description

Tender grilled zucchini slices rolled around a creamy, zesty ricotta filling, perfect as an appetizer or light main course.


Ingredients

For the Crust:

  • 2 medium zucchinis, sliced lengthwise into 1/4-inch strips
  • 1 cup ricotta cheese
  • 1/4 cup fresh basil, chopped
  • 1 lemon, zested and juiced
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

1. Prepare the Crust:

  1. Preheat grill to medium-high heat. Brush zucchini slices with olive oil and season with salt and pepper.
  2. Grill zucchini for 2-3 minutes per side until tender and grill marks appear. Remove and let cool slightly.
  3. In a bowl, mix ricotta, basil, lemon zest, lemon juice, garlic, Parmesan, salt, and pepper until well combined.
  4. Place a spoonful of the ricotta mixture at one end of each zucchini slice and roll up tightly.
  5. Arrange rollups on a serving platter, drizzle with extra olive oil and lemon juice if desired, and serve.

Notes

You can customize the seasonings to taste.
