These zucchini rollups are a delightful and healthy appetizer or side dish, using fresh summer ingredients for a burst of flavor.


Ingredients

For the Crust:

  • 2 large zucchini
  • 1 cup ricotta cheese
  • 1 tablespoon lemon zest
  • 2 tablespoons chopped fresh basil
  • Salt and pepper to taste
  • 1 cup slow-roasted tomatoes

Instructions

1. Prepare the Crust:

  1. Slice the zucchini lengthwise into thin strips using a mandoline or sharp knife.
  2. Grill the zucchini slices on each side for about 2 minutes until slightly charred and soft.
  3. In a bowl, mix ricotta cheese, lemon zest, chopped basil, salt, and pepper.
  4. Place a spoonful of the ricotta mixture at one end of each grilled zucchini slice, add a slow-roasted tomato, and roll up tightly.
  5. Secure the rollups with a toothpick if needed and serve warm.
