For the Crust:
- 2 large zucchini
- 1 cup ricotta cheese
- 1 tablespoon lemon zest
- 2 tablespoons chopped fresh basil
- Salt and pepper to taste
- 1 cup slow-roasted tomatoes
Instructions
1. Prepare the Crust:
- Slice the zucchini lengthwise into thin strips using a mandoline or sharp knife.
- Grill the zucchini slices on each side for about 2 minutes until slightly charred and soft.
- In a bowl, mix ricotta cheese, lemon zest, chopped basil, salt, and pepper.
- Place a spoonful of the ricotta mixture at one end of each grilled zucchini slice, add a slow-roasted tomato, and roll up tightly.
- Secure the rollups with a toothpick if needed and serve warm.
