Description

A hearty and healthy low-carb casserole featuring seasoned ground beef, fresh zucchini, and melted cheese.


Ingredients

For the Crust:

  • 1 lb ground beef
  • 2 medium zucchinis, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add onion and garlic, cook until softened.
  3. Add ground beef, season with salt, pepper, and Italian seasoning. Cook until browned.
  4. Layer sliced zucchini in a baking dish, top with the beef mixture, and sprinkle with cheeses.
  5. Bake for 25-30 minutes until zucchini is tender and cheese is golden.

Notes

You can customize the seasonings to taste.
