For the Crust:

  • 1 lb ground beef
  • 1 large sweet potato, peeled and diced
  • 1 medium zucchini, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1/2 cup beef broth

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it up with a spoon.
  2. Add chopped onion and minced garlic to the skillet. Sauté until onion is translucent.
  3. Stir in diced sweet potato, paprika, oregano, salt, and pepper. Cook for 5 minutes, stirring occasionally.
  4. Pour in beef broth, cover, and simmer for 10 minutes or until sweet potatoes are tender.
  5. Add sliced zucchini to the skillet and cook uncovered for another 5-7 minutes until zucchini is tender but still firm.
  6. Adjust seasoning if needed and serve hot.

Notes
