For the Crust:
- 1 lb ground turkey
- 1 medium zucchini, diced
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 tsp dried oregano
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 3-4 minutes.
- Add ground turkey and cook until browned, breaking it up with a spoon. Stir in garlic, oregano, paprika, salt, and pepper.
- Add diced zucchini and chickpeas to the skillet. Cook for 5 minutes, stirring occasionally.
- Pour in diced tomatoes and bring to a simmer. Reduce heat and cook for 15-20 minutes, until zucchini is tender and sauce has thickened.
- Garnish with fresh parsley before serving.
