A vibrant and hearty salad featuring pan-fried halloumi, sweet cranberries, and creamy butter beans, all tossed in a refreshing mint-lemon dressing.

For the Crust:

  • 200g halloumi cheese, sliced
  • 1 can (400g) butter beans, drained and rinsed
  • 1/4 cup dried cranberries
  • 2 cups mixed salad greens
  • 1/4 cup fresh mint leaves, chopped
  • 2 tbsp extra virgin olive oil
  • 1 lemon, juiced and zested
  • 1 small red onion, thinly sliced
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat a non-stick pan over medium heat and pan-fry the halloumi slices until golden brown on both sides, about 2-3 minutes per side. Set aside.
  2. In a large bowl, combine the butter beans, dried cranberries, mixed salad greens, red onion, and fresh mint.
  3. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and pepper to create the dressing.
  4. Pour the dressing over the salad mixture and toss gently to combine.
  5. Top the salad with the pan-fried halloumi slices and serve immediately.

Notes
