For the Crust:
- 1 cup uncooked white rice
- 8 oz halloumi cheese, sliced
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted
- 1 cup plain Greek yogurt
- 2 tbsp fresh lemon juice
- 2 tbsp olive oil
- 1 tsp dried oregano
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Cook the rice according to package instructions, then fluff with a fork and set aside.
- In a bowl, combine the cucumber, cherry tomatoes, red onion, and olives to make the Greek salad.
- In a small bowl, whisk together the Greek yogurt, lemon juice, 1 tbsp olive oil, oregano, salt, and pepper to create the dressing.
- Heat the remaining 1 tbsp olive oil in a skillet over medium-high heat. Add the halloumi slices and cook for 2-3 minutes per side until golden brown.
- Assemble the bowls by dividing the rice, Greek salad, and seared halloumi. Drizzle with the yogurt dressing before serving.
