Description

A tropical twist on classic chicken salad, featuring tender chicken, sweet pineapple, and crunchy vegetables in a creamy dressing.

For the Crust:

  • 2 cups cooked chicken, shredded
  • 1 cup pineapple chunks, drained
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup celery, diced
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon soy sauce
  • Salt and pepper to taste
  • 2 tablespoons fresh cilantro, chopped

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the shredded chicken, pineapple chunks, red bell pepper, red onion, and celery.
  2. In a small bowl, whisk together the mayonnaise, lime juice, soy sauce, salt, and pepper.
  3. Pour the dressing over the chicken mixture and toss gently until everything is evenly coated.
  4. Stir in the fresh cilantro just before serving. Serve chilled over greens, in sandwiches, or as a side.
