For the Crust:
- 2 cups cooked chicken, shredded
- 1 cup pineapple chunks, drained
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup celery, diced
- 1/2 cup mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon soy sauce
- Salt and pepper to taste
- 2 tablespoons fresh cilantro, chopped
Instructions
1. Prepare the Crust:
- In a large bowl, combine the shredded chicken, pineapple chunks, red bell pepper, red onion, and celery.
- In a small bowl, whisk together the mayonnaise, lime juice, soy sauce, salt, and pepper.
- Pour the dressing over the chicken mixture and toss gently until everything is evenly coated.
- Stir in the fresh cilantro just before serving. Serve chilled over greens, in sandwiches, or as a side.
