For the Crust:
- 2 boneless, skinless chicken breasts
- 2 medium sweet potatoes, peeled and cubed
- 1 ripe avocado, diced
- 1/4 cup red onion, finely chopped
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 1 tablespoon fresh lime juice
- 2 tablespoons chopped cilantro
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, paprika, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender and crispy.
- Season chicken breasts with salt and pepper. Heat a skillet over medium-high heat, add a drizzle of olive oil, and cook chicken for 6-7 minutes per side until cooked through. Let rest before slicing.
- In a bowl, combine diced avocado, red onion, lime juice, cilantro, salt, and pepper. Gently mix to coat.
- Assemble plates with sliced chicken, roasted sweet potatoes, and avocado mix. Serve immediately.
