For the Crust:

  • 2 boneless, skinless chicken breasts
  • 1 ripe avocado
  • 1 lime, juiced
  • 1/4 cup red onion, finely diced
  • 1/4 cup cherry tomatoes, halved
  • 4 cups mixed greens (e.g., spinach, arugula)
  • 1/2 cup corn kernels (fresh or canned)
  • 1/4 cup cilantro, chopped
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Season chicken breasts with salt and pepper. Heat olive oil in a grill pan over medium-high heat and cook chicken for 6-7 minutes per side until cooked through. Let rest for 5 minutes, then slice.
  2. In a bowl, mash the avocado with lime juice. Stir in red onion, cilantro, and salt to taste to make the guacamole.
  3. Assemble bowls by dividing mixed greens, cherry tomatoes, and corn among four bowls. Top with sliced chicken and a scoop of guacamole.
