For the Crust:

  • 2 boneless, skinless chicken breasts, sliced
  • 1 avocado, pitted and peeled
  • 1 lime, juiced
  • 2 tablespoons Greek yogurt
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup cooked quinoa
  • 1/2 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

1. Prepare the Crust:

  1. Season chicken slices with garlic powder, salt, and pepper. Heat olive oil in a pan over medium heat and cook chicken for 6-8 minutes per side until fully cooked and golden. Set aside.
  2. In a bowl, mash avocado with lime juice and Greek yogurt until smooth. Season with salt and pepper to make the creamy guacamole.
  3. Assemble bowls by dividing cooked quinoa among four bowls. Top with cooked chicken, cherry tomatoes, cucumber, and red onion. Add a dollop of creamy guacamole and garnish with fresh cilantro.
