For the Crust:

  • 1 lb boneless, skinless chicken breasts, cut into strips
  • 1 lb baby potatoes, halved
  • 2 tbsp olive oil, divided
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 1 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, chopped
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 2 cups mixed greens

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C). Toss potatoes with 1 tbsp olive oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until crispy.
  2. Season chicken strips with salt and pepper. Heat remaining olive oil in a grill pan over medium-high heat. Grill chicken for 5-7 minutes per side until cooked through.
  3. In a small bowl, mix Greek yogurt, lemon juice, dill, and a pinch of salt to make the yogurt sauce.
  4. Assemble bowls by dividing mixed greens, roasted potatoes, grilled chicken, cucumber, and cherry tomatoes. Drizzle with yogurt sauce before serving.
