Description

A comforting one-pan meal featuring tender chicken in a creamy herb sauce, served over fluffy rice with crisp green beans.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 pound fresh green beans, trimmed
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions

1. Prepare the Crust:

  1. Season chicken breasts with salt, pepper, and oregano. Heat olive oil in a large skillet over medium-high heat and sear chicken until golden brown, about 5 minutes per side. Remove and set aside.
  2. In the same skillet, add onion and garlic, sauté until softened, about 3 minutes. Stir in rice and cook for 1 minute to lightly toast.
  3. Pour in chicken broth and bring to a simmer. Add green beans, then return chicken to the skillet. Cover and cook for 20 minutes, or until rice is tender and chicken is cooked through.
  4. Reduce heat to low, stir in heavy cream, Parmesan, parsley, and thyme. Simmer uncovered for 5 minutes until sauce thickens. Season with additional salt and pepper if needed.
  5. Serve hot, garnished with extra herbs if desired.

Notes

You can customize the seasonings to taste.
