A comforting one-pan meal featuring tender chicken breasts coated in a savory herb crust, roasted alongside crispy golden potatoes and fresh green beans tossed with garlic.

For the Crust:
- 4 boneless, skinless chicken breasts
- 1 lb baby potatoes, halved
- 1 lb green beans, trimmed
- 3 tbsp olive oil, divided
- 2 tbsp dried Italian herbs
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 cloves garlic, minced
- 1 lemon, sliced
- Fresh parsley, chopped for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a small bowl, mix Italian herbs, garlic powder, paprika, salt, and pepper. Rub chicken breasts with 1 tbsp olive oil, then coat evenly with the herb mixture.
- Toss halved potatoes with 1 tbsp olive oil and spread on one side of the baking sheet. Place chicken breasts on the other side.
- Bake for 20 minutes. Meanwhile, toss green beans with remaining 1 tbsp olive oil and minced garlic.
- Remove baking sheet from oven, add green beans around the chicken and potatoes. Place lemon slices on top of chicken.
- Return to oven and bake for another 10-15 minutes, until chicken is cooked through (internal temperature 165°F) and potatoes are golden.
- Garnish with fresh parsley before serving.
