Description

A vibrant and healthy dinner featuring flaky salmon with a crispy herb crust, golden roasted potatoes, and a refreshing cucumber salad.

For the Crust:

  • 4 salmon fillets (6 oz each)
  • 1 lb baby potatoes, halved
  • 2 tbsp olive oil
  • 1/4 cup breadcrumbs
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh dill
  • 1 tsp garlic powder
  • Salt and black pepper to taste
  • 1 large cucumber, thinly sliced
  • 1/4 red onion, thinly sliced
  • 2 tbsp lemon juice
  • 1 tbsp extra virgin olive oil
  • 1 tsp honey

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss potatoes with 1 tbsp olive oil, salt, and pepper; spread on a baking sheet and roast for 25-30 minutes until crispy.
  2. In a bowl, mix breadcrumbs, parsley, dill, garlic powder, salt, and pepper. Brush salmon with remaining olive oil and press herb mixture onto the top of each fillet.
  3. Place salmon on a separate baking sheet and bake for 12-15 minutes until cooked through and crust is golden.
  4. While salmon and potatoes cook, combine cucumber, red onion, lemon juice, extra virgin olive oil, honey, salt, and pepper in a bowl; toss to coat.
  5. Serve salmon alongside crispy potatoes and cucumber salad. Garnish with extra herbs if desired.

You can customize the seasonings to taste.
