For the Crust:
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tbsp dried Italian herbs
- 2 cloves garlic, minced
- Salt and black pepper to taste
- 8 oz penne pasta
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 lb baby potatoes, halved
- 3 cloves garlic, sliced
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Marinate chicken with olive oil, Italian herbs, minced garlic, salt, and pepper for 30 minutes.
- Preheat oven to 400°F. Toss baby potatoes with olive oil, sliced garlic, salt, and pepper; roast for 25-30 minutes until golden.
- Grill chicken over medium heat for 6-7 minutes per side until cooked through; let rest before slicing.
- Cook penne according to package directions; drain and set aside.
- In a saucepan, heat heavy cream and Parmesan over low heat until smooth; toss with cooked penne.
- Serve sliced chicken over creamy penne with roasted potatoes on the side, garnished with parsley.
