For the Crust:
- 4 ripe pears
- 1 bottle of red wine
- 1 cup sugar
- 1 cinnamon stick
- 1 vanilla bean, split
- 8 ounces of Brie cheese
- 1 package puff pastry, thawed
- 1 egg, beaten
Instructions
1. Prepare the Crust:
- Poach the pears: In a saucepan, combine red wine, sugar, cinnamon stick, and vanilla bean. Bring to a simmer and poach the peeled pears for about 20 minutes.
- Cool the pears and wrap each in Brie. Encase with puff pastry, sealing the edges. Brush with beaten egg.
- Bake at 400°F (200°C) for about 15 minutes or until the pastry is golden brown.
