Description

Crispy, crumbly cinnamon cookies dusted with cinnamon sugar, a beloved treat in Mexican cuisine.


Ingredients

For the Crust:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable shortening
  • 1 large egg
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 cup milk
  • 1/2 cup granulated sugar mixed with 1 tablespoon ground cinnamon for coating

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together shortening and sugar until light and fluffy. Beat in the egg until combined.
  3. In a separate bowl, whisk together flour, baking powder, salt, and cinnamon. Gradually mix into the wet ingredients, adding milk as needed to form a soft dough.
  4. Roll dough out on a floured surface to 1/4-inch thickness. Cut into desired shapes, such as circles or diamonds.
  5. Place cookies on the prepared baking sheet and bake for 12-15 minutes, or until edges are lightly golden.
  6. While still warm, coat each cookie in the cinnamon-sugar mixture. Cool completely on a wire rack.
