For the Crust:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup vegetable shortening
- 1 large egg
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 cup milk
- 1/2 cup granulated sugar mixed with 1 tablespoon ground cinnamon for coating
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together shortening and sugar until light and fluffy. Beat in the egg until combined.
- In a separate bowl, whisk together flour, baking powder, salt, and cinnamon. Gradually mix into the wet ingredients, adding milk as needed to form a soft dough.
- Roll dough out on a floured surface to 1/4-inch thickness. Cut into desired shapes, such as circles or diamonds.
- Place cookies on the prepared baking sheet and bake for 12-15 minutes, or until edges are lightly golden.
- While still warm, coat each cookie in the cinnamon-sugar mixture. Cool completely on a wire rack.
