For the Crust:
- 4 boneless, skinless chicken breasts
- 4 oz brie cheese, sliced
- 1/2 cup cranberry sauce
- 1/2 cup breadcrumbs
- 1 tsp dried thyme
- 1 tsp garlic powder
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- Slice a pocket into each chicken breast, being careful not to cut all the way through.
- Stuff each breast with brie slices and a spoonful of cranberry sauce. Secure with toothpicks if needed.
- Mix breadcrumbs, thyme, garlic powder, salt, and pepper in a shallow dish. Dredge each stuffed chicken breast in the mixture.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 2-3 minutes per side until golden.
- Transfer skillet to the oven and bake for 20-25 minutes, or until chicken is cooked through.
- Let rest for 5 minutes before serving.
