Description

A festive and elegant main dish featuring tender chicken breasts stuffed with creamy brie and cranberry sauce, then baked to golden perfection.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 4 oz brie cheese, sliced
  • 1/2 cup cranberry sauce
  • 1/2 cup breadcrumbs
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. Slice a pocket into each chicken breast, being careful not to cut all the way through.
  3. Stuff each breast with brie slices and a spoonful of cranberry sauce. Secure with toothpicks if needed.
  4. Mix breadcrumbs, thyme, garlic powder, salt, and pepper in a shallow dish. Dredge each stuffed chicken breast in the mixture.
  5. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 2-3 minutes per side until golden.
  6. Transfer skillet to the oven and bake for 20-25 minutes, or until chicken is cooked through.
  7. Let rest for 5 minutes before serving.
