Description

Sweet and savory roasted sweet potato bites glazed with a hint of red wine reduction, perfect for festive gatherings.

For the Crust:

  • 2 medium sweet potatoes, peeled and cubed
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cinnamon
  • 1/4 cup red wine
  • 2 tbsp honey
  • 1 tbsp balsamic vinegar
  • Fresh thyme for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, salt, pepper, and cinnamon. Spread on a baking sheet and roast for 25 minutes, until tender and slightly caramelized.
  2. While potatoes roast, combine red wine, honey, and balsamic vinegar in a small saucepan. Simmer over medium heat until reduced by half, about 8-10 minutes.
  3. Drizzle the red wine glaze over the roasted sweet potato bites, toss gently to coat, and garnish with fresh thyme before serving.
