For the Crust:
- 2 medium sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cinnamon
- 1/4 cup red wine
- 2 tbsp honey
- 1 tbsp balsamic vinegar
- Fresh thyme for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, salt, pepper, and cinnamon. Spread on a baking sheet and roast for 25 minutes, until tender and slightly caramelized.
- While potatoes roast, combine red wine, honey, and balsamic vinegar in a small saucepan. Simmer over medium heat until reduced by half, about 8-10 minutes.
- Drizzle the red wine glaze over the roasted sweet potato bites, toss gently to coat, and garnish with fresh thyme before serving.
