A festive, elegant salmon dish featuring a creamy brie and tart cranberry crust, topped with crunchy pistachios for a holiday-worthy meal.

For the Crust:

  • 1.5 lbs salmon fillet, skin-on
  • 4 oz brie cheese, rind removed and cubed
  • 1/2 cup dried cranberries, finely chopped
  • 1/4 cup pistachios, shelled and roughly chopped
  • 2 tbsp olive oil
  • 1 tsp fresh thyme leaves
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 tbsp honey (optional, for drizzling)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place salmon skin-side down on the baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. In a small bowl, mix brie cubes and cranberries. Spread evenly over the top of the salmon fillet.
  4. Sprinkle chopped pistachios and thyme leaves over the brie-cranberry mixture.
  5. Bake for 20-25 minutes, until salmon is cooked through and crust is golden and bubbly.
  6. Remove from oven, let rest for 5 minutes. Drizzle with honey if desired before serving.

You can customize the seasonings to taste.
