For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup cream cheese, softened
- 1/4 cup chopped fresh spinach
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- 2 tbsp olive oil
- 1/2 cup chicken broth
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Butterfly each chicken breast by slicing horizontally through the center, being careful not to cut all the way through.
- In a bowl, mix mozzarella, Parmesan, cream cheese, spinach, garlic, Italian seasoning, salt, and pepper until well combined.
- Spread the cheese mixture evenly inside each butterflied chicken breast, then fold closed and secure with toothpicks.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown.
- Pour chicken broth into the skillet around the chicken, then transfer to the preheated oven. Bake for 20-25 minutes, or until chicken is cooked through and juices run clear.
- Let rest for 5 minutes before removing toothpicks and serving.
