For the Crust:
- 1 lb ground lamb or beef
- 1/2 cup finely chopped red onion
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 large egg, beaten
- 1/4 cup breadcrumbs
- 2 cups cooked white or brown rice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup crumbled feta cheese
- 1/2 cup tzatziki sauce
- 1 tbsp olive oil for cooking
Instructions
1. Prepare the Crust:
- In a large bowl, combine ground meat, red onion, garlic, parsley, oregano, cumin, salt, pepper, egg, and breadcrumbs. Mix gently until just combined.
- Shape the mixture into 1-inch meatballs. Heat olive oil in a skillet over medium heat and cook meatballs for 8-10 minutes, turning occasionally, until browned and cooked through.
- Divide cooked rice among four bowls. Top each with meatballs, cherry tomatoes, cucumber, and crumbled feta.
- Drizzle with tzatziki sauce and serve immediately.
