A nostalgic homemade version of the classic Nutter Butter cookies, featuring thick, soft peanut butter cookies sandwiching a creamy peanut butter filling.

For the Crust:
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup powdered sugar
- 2 tablespoons creamy peanut butter
- 1 tablespoon milk
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together 1 cup peanut butter, butter, granulated sugar, and brown sugar until smooth. Beat in egg and vanilla.
- In a separate bowl, whisk flour, baking soda, and salt. Gradually mix into wet ingredients until dough forms.
- Roll dough into 1-inch balls, place on baking sheets, and flatten slightly with a fork in a crisscross pattern.
- Bake for 10-12 minutes until edges are lightly golden. Cool on sheets for 5 minutes, then transfer to wire racks.
- For filling, mix powdered sugar, 2 tablespoons peanut butter, and milk until smooth. Spread on half the cookies and top with remaining cookies.
