For the Crust:

  • 1 lb ground beef (80/20 blend)
  • 1/2 cup breadcrumbs
  • 1 large egg, beaten
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups beef broth
  • 1 cup whole milk
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine ground beef, breadcrumbs, egg, onion, garlic, Worcestershire sauce, parsley, salt, and pepper. Mix gently until just combined.
  2. Shape the mixture into 1.5-inch meatballs (about 12-14). Heat olive oil in a large skillet over medium-high heat. Brown meatballs on all sides, about 5-7 minutes total. Remove and set aside.
  3. In the same skillet, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes until golden. Gradually whisk in beef broth and milk until smooth.
  4. Stir in onion powder and thyme. Bring to a simmer, then reduce heat to low. Return meatballs to skillet, cover, and simmer for 15-20 minutes until cooked through and gravy thickens. Season with salt and pepper.

You can customize the seasonings to taste.
