Description

Caramelized Brussels sprouts tossed in a sweet and tangy honey balsamic glaze, topped with creamy goat cheese for a delicious side dish.

For the Crust:

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 3 tbsp balsamic vinegar
  • 2 tbsp honey
  • 2 oz goat cheese, crumbled
  • 2 tbsp chopped walnuts (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss Brussels sprouts with olive oil, salt, and pepper on a baking sheet.
  2. Roast for 20-25 minutes until tender and caramelized, stirring halfway.
  3. In a small saucepan, combine balsamic vinegar and honey. Simmer over medium heat for 3-5 minutes until slightly thickened.
  4. Drizzle the glaze over the roasted Brussels sprouts and toss to coat.
  5. Transfer to a serving dish and top with crumbled goat cheese and walnuts if using.
