For the Crust:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 cups mixed garden vegetables (such as bell peppers, zucchini, and cherry tomatoes), chopped
  • 1 cup shredded mozzarella cheese
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400°F (200°C). Season the chicken breasts with salt, pepper, and dried thyme.
  2. In a small saucepan, combine balsamic vinegar, honey, and minced garlic. Simmer over medium heat for 5-7 minutes until slightly thickened to form a glaze.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 3-4 minutes per side until golden brown.
  4. Arrange the chopped vegetables around the chicken in the skillet. Brush the chicken generously with the honey-balsamic glaze.
  5. Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the chicken is cooked through and vegetables are tender.
  6. Remove from the oven, sprinkle mozzarella cheese over the chicken and vegetables, and return to the oven for 3-5 minutes until the cheese is melted and bubbly.
  7. Garnish with fresh parsley and serve hot.
