For the Crust:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 2 cups mixed garden vegetables (such as bell peppers, zucchini, and cherry tomatoes), chopped
- 1 cup shredded mozzarella cheese
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Preheat the oven to 400°F (200°C). Season the chicken breasts with salt, pepper, and dried thyme.
- In a small saucepan, combine balsamic vinegar, honey, and minced garlic. Simmer over medium heat for 5-7 minutes until slightly thickened to form a glaze.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 3-4 minutes per side until golden brown.
- Arrange the chopped vegetables around the chicken in the skillet. Brush the chicken generously with the honey-balsamic glaze.
- Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the chicken is cooked through and vegetables are tender.
- Remove from the oven, sprinkle mozzarella cheese over the chicken and vegetables, and return to the oven for 3-5 minutes until the cheese is melted and bubbly.
- Garnish with fresh parsley and serve hot.
