For the Crust:
- 4 boneless, skinless chicken breasts
- 1/4 cup balsamic vinegar
- 3 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 red onion, chopped
- 2 tablespoons olive oil
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, whisk together balsamic vinegar, honey, garlic, and thyme. Set aside.
- Place chicken breasts on one side of the baking sheet. Brush with half of the glaze. Arrange vegetables on the other side, drizzle with olive oil, and season with salt and pepper.
- Roast for 25-30 minutes, flipping chicken and stirring vegetables halfway through. Brush chicken with remaining glaze in the last 10 minutes.
- Remove from oven, let chicken rest for 5 minutes, then serve with roasted vegetables.
