For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup fresh or frozen cranberries
- 1/4 cup honey
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 1/2 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- In a bowl, mix cranberries, honey, olive oil, thyme, garlic powder, salt, and pepper.
- Place chicken breasts in a baking dish and pour the cranberry mixture over them.
- Bake for 25-30 minutes, or until chicken is cooked through.
- Sprinkle feta cheese over the chicken and bake for an additional 5 minutes.
- Garnish with fresh parsley before serving.
