A savory and sweet chicken dish baked with honey-glazed cranberries and topped with creamy feta cheese.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh or frozen cranberries
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix cranberries, honey, olive oil, thyme, garlic powder, salt, and pepper.
  3. Place chicken breasts in a baking dish and pour the cranberry mixture over them.
  4. Bake for 25-30 minutes, or until chicken is cooked through.
  5. Sprinkle feta cheese over the chicken and bake for an additional 5 minutes.
  6. Garnish with fresh parsley before serving.

Notes

You can customize the seasonings to taste.
