For the Crust:

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp grated ginger
  • 1 tbsp olive oil
  • 2 cups cooked white rice
  • 2 green onions, sliced
  • 1 tsp sesame seeds

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk together honey, minced garlic, soy sauce, rice vinegar, and grated ginger to make the sauce.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned and cooked through, about 6-8 minutes.
  3. Pour the honey garlic sauce over the chicken and simmer for 2-3 minutes until the sauce thickens and coats the chicken.
  4. Divide cooked rice among bowls, top with the honey garlic chicken, and garnish with sliced green onions and sesame seeds.
