For the Crust:
- 2 medium acorn squash, halved and seeded
- 3 tablespoons olive oil
- 1/4 cup honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cinnamon
- 4 ounces goat cheese, crumbled
- 1/2 cup fresh cranberries
- 2 tablespoons maple syrup
- 1 tablespoon water
- 1 teaspoon fresh thyme leaves
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Brush squash halves with olive oil and season with salt, pepper, and cinnamon.
- Place squash cut-side down on a baking sheet and roast for 25-30 minutes, until tender.
- Flip squash over, drizzle with honey, and return to oven for 5 minutes.
- Meanwhile, in a small saucepan, combine cranberries, maple syrup, and water. Simmer until cranberries burst and sauce thickens, about 8-10 minutes.
- Fill each squash half with crumbled goat cheese, drizzle with cranberry sauce, and garnish with fresh thyme before serving.
