For the Crust:

  • 1 lb boneless, skinless chicken breasts, cubed
  • 1/4 cup honey
  • Juice and zest of 2 limes
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 1 cup white rice, cooked
  • 1 large avocado, diced
  • 1/4 cup chopped cilantro
  • 2 tbsp olive oil
  • 1/2 red onion, finely chopped

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk together honey, lime juice, lime zest, minced garlic, smoked paprika, salt, and pepper. Add cubed chicken, toss to coat, and marinate for 15 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Add marinated chicken and cook for 6-8 minutes until golden and cooked through, stirring occasionally.
  3. In a separate bowl, combine cooked rice, diced avocado, chopped cilantro, and red onion. Gently mix until well combined.
  4. To assemble stacks, layer avocado rice at the bottom of serving bowls or plates, top with honey lime chicken, and garnish with extra cilantro if desired.
