For the Crust:
- 2 boneless, skinless chicken breasts
- 1/4 cup honey
- 2 limes, juiced and zested
- 2 cloves garlic, minced
- 1 cup cooked white rice
- 1 ripe avocado, diced
- 1/4 cup chopped cilantro
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a bowl, whisk together honey, lime juice, lime zest, minced garlic, salt, and pepper. Marinate chicken in half of the mixture for 15 minutes.
- Heat olive oil in a skillet over medium heat. Cook chicken for 6-7 minutes per side until fully cooked. Let rest, then slice.
- In another bowl, combine cooked rice, diced avocado, cilantro, and the remaining honey lime marinade. Mix gently.
- To assemble, layer avocado rice in serving bowls, top with sliced chicken, and garnish with extra cilantro if desired.
