For the Crust:

  • 2 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 2 limes, juiced and zested
  • 2 cloves garlic, minced
  • 1 cup cooked white rice
  • 1 ripe avocado, diced
  • 1/4 cup chopped cilantro
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk together honey, lime juice, lime zest, minced garlic, salt, and pepper. Marinate chicken in half of the mixture for 15 minutes.
  2. Heat olive oil in a skillet over medium heat. Cook chicken for 6-7 minutes per side until fully cooked. Let rest, then slice.
  3. In another bowl, combine cooked rice, diced avocado, cilantro, and the remaining honey lime marinade. Mix gently.
  4. To assemble, layer avocado rice in serving bowls, top with sliced chicken, and garnish with extra cilantro if desired.
