For the Crust:
- 1 lb large shrimp, peeled and deveined
- 2 tbsp honey
- Juice and zest of 2 limes
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 2 cups cooked white or brown rice
- 1 large avocado, diced
- 1/4 cup chopped fresh cilantro
- 1/4 cup plain Greek yogurt
- 1 tbsp olive oil
- 1 jalapeño, seeded and chopped (optional)
- 1/4 cup red onion, finely diced
Instructions
1. Prepare the Crust:
- In a bowl, whisk together honey, lime juice and zest, garlic, smoked paprika, salt, and pepper. Add shrimp and marinate for 10-15 minutes.
- While shrimp marinates, prepare cilantro sauce by blending cilantro, Greek yogurt, olive oil, jalapeño (if using), and a pinch of salt until smooth. Set aside.
- Heat a skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and cooked through. Remove from heat.
- To assemble stacks, layer rice, diced avocado, and shrimp in rings or molds. Drizzle with cilantro sauce and garnish with red onion and extra cilantro. Serve immediately.
