Description

A vibrant and flavorful side dish featuring sweet roasted carrots and beets, topped with tangy feta, dried cranberries, and crunchy toasted pistachios.

For the Crust:

  • 4 large carrots, peeled and sliced into sticks
  • 3 medium beets, peeled and cubed
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1/2 cup crumbled feta cheese
  • 1/4 cup dried cranberries
  • 1/4 cup toasted pistachios, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss carrots and beets with olive oil, honey, thyme, salt, and pepper until evenly coated.
  3. Spread vegetables in a single layer on the baking sheet. Roast for 25-30 minutes, or until tender and lightly caramelized.
  4. Transfer roasted vegetables to a serving dish. Top with crumbled feta, dried cranberries, and toasted pistachios.
  5. Serve warm or at room temperature.
