For the Crust:
- 4 large carrots, peeled and sliced into sticks
- 3 medium beets, peeled and cubed
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 1/2 cup crumbled feta cheese
- 1/4 cup dried cranberries
- 1/4 cup toasted pistachios, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss carrots and beets with olive oil, honey, thyme, salt, and pepper until evenly coated.
- Spread vegetables in a single layer on the baking sheet. Roast for 25-30 minutes, or until tender and lightly caramelized.
- Transfer roasted vegetables to a serving dish. Top with crumbled feta, dried cranberries, and toasted pistachios.
- Serve warm or at room temperature.
