For the Crust:
- 1 lb carrots, peeled and sliced into sticks
- 2 tbsp olive oil
- 2 tbsp honey
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup crumbled feta cheese
- 1/4 cup dried cranberries
- 1/4 cup chopped walnuts
- 1 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss carrots with olive oil, honey, salt, and pepper until evenly coated.
- Spread carrots in a single layer on the baking sheet. Roast for 20-25 minutes, until tender and caramelized.
- Transfer roasted carrots to a serving dish. Top with feta, cranberries, walnuts, and parsley.
- Serve warm as a side dish.
