A sweet and savory side dish featuring tender roasted sweet potatoes drizzled with honey, topped with creamy goat cheese and crunchy pecans.

For the Crust:

  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons honey
  • 1/4 cup crumbled goat cheese
  • 1/4 cup chopped pecans
  • 1 tablespoon fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss sweet potato cubes with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  3. Spread sweet potatoes in a single layer on the prepared baking sheet. Roast for 25-30 minutes, or until tender and lightly browned.
  4. Drizzle honey over the roasted sweet potatoes and toss gently to coat.
  5. Transfer to a serving dish and top with crumbled goat cheese, chopped pecans, and fresh parsley. Serve warm.
