For the Crust:
- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 2 tablespoons honey
- 1/4 cup crumbled goat cheese
- 1/4 cup chopped pecans
- 1 tablespoon fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss sweet potato cubes with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
- Spread sweet potatoes in a single layer on the prepared baking sheet. Roast for 25-30 minutes, or until tender and lightly browned.
- Drizzle honey over the roasted sweet potatoes and toss gently to coat.
- Transfer to a serving dish and top with crumbled goat cheese, chopped pecans, and fresh parsley. Serve warm.
