A vibrant dish featuring crispy roasted vegetables drizzled with spicy-sweet hot honey and served over creamy, tangy whipped feta.

For the Crust:

  • 2 cups chopped carrots
  • 2 cups chopped bell peppers (mixed colors)
  • 1 large red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 8 oz feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 2 tablespoons honey
  • 1/2 teaspoon red pepper flakes
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss carrots, bell peppers, and red onion with olive oil, smoked paprika, garlic powder, salt, and black pepper on a baking sheet.
  2. Roast vegetables for 25-30 minutes until tender and slightly charred, stirring halfway through.
  3. While vegetables roast, blend feta, Greek yogurt, and lemon juice in a food processor until smooth and creamy. Set aside.
  4. In a small saucepan, warm honey and red pepper flakes over low heat for 2-3 minutes until fragrant. Remove from heat.
  5. Spread whipped feta on a serving platter, top with roasted vegetables, drizzle with hot honey, and garnish with fresh parsley.

Notes

You can customize the seasonings to taste.
