For the Crust:

  • 1 large head of green cabbage, cored and chopped into wedges
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). In a large oven-safe skillet or Dutch oven, heat olive oil over medium heat.
  2. Add sliced onion and cook until softened, about 5 minutes. Stir in minced garlic and cook for another minute until fragrant.
  3. Arrange cabbage wedges in the skillet, pour vegetable broth over them, and sprinkle with thyme, smoked paprika, salt, and pepper.
  4. Cover and bake for 25-30 minutes until cabbage is tender and meltingly soft. If using, sprinkle Parmesan cheese over the top and broil for 2-3 minutes until golden.
  5. Garnish with fresh parsley and serve warm.
