For the Crust:
- 4 chicken cutlets, pounded thin
- 2 large tomatoes, diced
- 1 ball burrata cheese, torn
- 1/4 cup fresh basil leaves, chopped
- 2 cloves garlic, minced
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and black pepper to taste
- 1/2 cup all-purpose flour
- 1 egg, beaten
- 1/2 cup breadcrumbs
Instructions
1. Prepare the Crust:
- Season chicken cutlets with salt and pepper, then dredge in flour, dip in beaten egg, and coat with breadcrumbs.
- Heat 2 tbsp olive oil in a large skillet over medium heat and cook chicken until golden and cooked through, about 4-5 minutes per side.
- In a bowl, combine diced tomatoes, basil, garlic, remaining olive oil, balsamic vinegar, salt, and pepper.
- Place cooked chicken cutlets on a serving plate, top with the tomato-basil mixture, and finish with torn burrata cheese.
