For the Crust:

  • 1 cup rolled oats
  • 1/2 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1/4 cup almond butter
  • 1 tsp pumpkin pie spice
  • 1/4 cup chopped pecans
  • 2 tbsp chia seeds
  • Pinch of salt

Instructions

1. Prepare the Crust:

  1. In a medium bowl, mix pumpkin puree, maple syrup, and almond butter until smooth.
  2. Add rolled oats, pumpkin pie spice, pecans, chia seeds, and salt. Stir until well combined.
  3. Refrigerate mixture for 20 minutes, then roll into 1-inch balls. Store in an airtight container.
