For the Crust:
- 3 large eggs, separated
- 1/4 cup granulated sugar
- 1/4 cup cake flour
- 1 tablespoon matcha powder
- 1/4 cup milk
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cream of tartar
- Butter or oil for greasing
- Powdered sugar for dusting
Instructions
1. Prepare the Crust:
- Separate egg yolks and whites into two bowls. In the yolk bowl, whisk with sugar until pale, then add milk, vanilla, sifted flour, and matcha until smooth.
- In the egg white bowl, add cream of tartar and beat with a mixer until stiff peaks form.
- Gently fold one-third of the egg whites into the yolk mixture, then fold in the rest until just combined.
- Heat a non-stick pan over low heat, grease lightly, and spoon batter into rounds. Add a few drops of water around pancakes, cover, and cook for 4-5 minutes until set.
- Carefully flip pancakes, cover again, and cook for another 3-4 minutes. Serve immediately dusted with powdered sugar.
