Description

Fluffy, jiggly soufflé pancakes infused with matcha, offering a light, cloud-like interior and a delicate green tea flavor.


Ingredients

For the Crust:

  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1/4 cup cake flour
  • 1 tablespoon matcha powder
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cream of tartar
  • Butter or oil for greasing
  • Powdered sugar for dusting

Instructions

1. Prepare the Crust:

  1. Separate egg yolks and whites into two bowls. In the yolk bowl, whisk with sugar until pale, then add milk, vanilla, sifted flour, and matcha until smooth.
  2. In the egg white bowl, add cream of tartar and beat with a mixer until stiff peaks form.
  3. Gently fold one-third of the egg whites into the yolk mixture, then fold in the rest until just combined.
  4. Heat a non-stick pan over low heat, grease lightly, and spoon batter into rounds. Add a few drops of water around pancakes, cover, and cook for 4-5 minutes until set.
  5. Carefully flip pancakes, cover again, and cook for another 3-4 minutes. Serve immediately dusted with powdered sugar.
