For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup dried cranberries
- 1/2 cup chicken broth
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup cranberry sauce
- 1 tablespoon honey
- 1 teaspoon balsamic vinegar
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Butterfly each chicken breast by slicing horizontally, leaving one side attached.
- In a bowl, mix spinach, feta, and dried cranberries. Stuff each chicken breast with the mixture and secure with toothpicks.
- Season chicken with garlic powder, salt, and pepper. Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear chicken for 3-4 minutes per side until golden brown. Transfer skillet to the oven and bake for 20-25 minutes until cooked through.
- While chicken bakes, combine cranberry sauce, honey, balsamic vinegar, and chicken broth in a small saucepan. Simmer for 5-7 minutes until thickened.
- Remove chicken from oven, let rest for 5 minutes, then drizzle with cranberry glaze before serving.
